This is a tough one with the new observer mode. I played the necro/monk build about 4 months ago and used to think it was really creative, bit different with an e/mo but now its fotm.
Right now Id have to say anything that Japan is using. Theyre seriously getting better and we almost lost to one the other day. They did drag it out by kiting around with distortion for the last 10 minutes but use all kinds of wacky stuff.

Strangest build ive seen was run by a very good guild group which i wont name. But they were running a very wierd ranger spike with 3 rangers and but 4 monks and an ele. I tried to piece this together through 1 battle i saw, so this is what i caught.
The rangers were mostly your normal spikers. R/Me, R/N (who took consume) and R/W (with frozen) was what I saw. Then they had an E/mo with Obsidian Flame to help the spike (hmm cast time? how was this coordinated with the quick ranger spike i wonder), glyph of energy for the obsidian, wards, and heal party.
The monks were 3 Mo/N and 1 Mo/Me. The 3 Mo/N all took vamp gaze and spiked with it with the rangers and ele (again, cast time would mess them up I would think). Mo/N #1 was a OOB healer, #2 was a bonder with OOB and ritual, #3 was a marytr bonder prot orders (??!!) he had Marytr, Life bond, aegis, guardian and order of pain for the rangers. The Mo/Me from what i saw was using channeling and spamming hex removal and healing. The idea of 4 monks that helped with offense along with healing and 2 half bonders was very very odd. Im assuming they either split up the group so only 4 bonds each or one just backed up the other for facing teams with heavy enchantment stripping.
As wierd as it is, this group worked very well together and FYI is a top 100 guild.

The origional concept of IWAY was origional and creative and its evolution as a build was great. I hate it but as far as the succesfulness of it and origionality was great.
Origionaly (i think) IWAY was just 8 W/R's with pets smashing everything. It evolved with orders to increase the damage, a tainted to spread some degen and a well placed meteor shower hurts ward teams to a great amount if they aren't quick enough to get away from it. The trappers with NR to slow down monks and necros which both hurt IWAY greatly, being as it has no hex removal and very little self healing. The conditions the trappers spread was great for slowing targets and spreading degen/cripple and the occasional blinding. It was a creative build, though now it is the most used HoH build in American Servers.
For origionality I would say an EoE bomb, but thats just me. Sadly 1 E/mo heal party char will shut it down effectively.

The most original build I have seen is Bring Back the Rifts's Pet Preassure build. My Guild is currently working on an adaptation for Tombs. Mostly because I like pets.

IWAY was originally 8 R/W bunnythumpers... but yah. IWAY gets my vote also.
I saw some weird one in HoH once with a bunny thumper or two and blackout/diversion mesmers. Very heavy monk-pressure. Basically they would just knock down the monks as much as possible...then the mesmers would come and blackout, their attributes were set so that the diversion would hit right when you'd be recovered from the blackout... And all the time, you'd have this bloomin' bunny thumper on your butt hehe not fun.
Maybe not so effective as we pretty much held out 6-7 minutes until they capped... but yah, was fun to see something original.
